In my family, summertime is a time that we eat lighter meals because it is just so darn hot here in Texas. Heavy meals are saved for the colder months! One thing I really love about this dish, is that it is great to eat in all of the seasons, depending on what sides (if any) you serve with it! I find at this time of the year, a fresh garden salad is great with this salmon dish. Easy to make, and seafood lovers will want this recipe on repeat!
