This one is in my meal prep menu for this week! This is the kind of breakfast I crave, way more than sugary cereals or donuts. I just don’t feel like cooking first thing in the morning when I wake up, but THIS is a no-brainer! I’ll most likely follow this recipe as-is, but I’m also going to add small, cubed red potatoes as well. Not only will that taste good, but it will also help me to spread out the meal by at least 2 or 3 more portions!
